You might say I’m a Terry Walters fan. I’ve posted about the cooking class I was extremely fortunate to attend with her teaching and only two other students, as well as sharing a few tips about kids and eating that I received from her during that class. Overall, she’s awesome, knows her stuff and creates fantastic recipes. That’s why I was thrilled when I won a giveaway on her blog for one of her books. Of course, since I’m a fan, I already have both of her cookbooks, so I asked if I could give her first book, Clean Food. and she agreed – and she’ll even sign it for you!
First, about the book. This is not simply a cookbook. There is a wealth of information contained here – from Terry’s own history with food, to ‘clean eating’ and healthy objects and food items to stock your kitchen and pantry with.
What’s great about this book, besides all the information it contains and the 200 recipes (give or take), is that it’s divided into seasons instead of ingredients or types of dishes, like so many other cookbooks. Terry’s philosophy is that you should eat what’s local and what’s seasonal – that whatever grows during that season is what your body needs. More hearty and heavy foods during the winter, and cooler and lighter foods during the summer.
One thing about the cookbook worth noting is that it’s completely gluten-free as well as vegan. In a lot of circles, ‘vegan’ can be a dirty word, but it’s not a bad thing. I do differ in opinion from Terry here – but she doesn’t make you feel badly about eating differently that she does – and that’s awesome. These dishes are great by themselves – she makes sure they’re nutritiously sound – but you could also eat them with meat, I suppose.

One of my favorite recipes is Garlic Kale saute with beans!
A variation on a Spinach Orzo Feta salad. I substitute Arugula and put in cherry tomatoes to make a “cool” salad with the olive oil and balsamic vinegar dressing. Yum!
My favourite healthy recipe is stir fry with olive oil!
We love to make kale chips.
I love to make roasted vegetables from our garden. We try to have at least two meatless meals a week if not more.
